About The Chef
Like many Jamaican males, my first name is Carlton. My father nicknamed me Caleeboy, a name I loved because it made me feel special and loved.
I was born in Spanish Town, Jamaica, and later moved to the States. Thanks to my parents, my siblings and I never lost our love for the foods and flavors of the “Island in the Sun.”
Black cake, or rum cake, was a favored seasonal dessert in our home, mostly served at Christmas or weddings. I always thought something so good should be enjoyed year-round, not just for special events.
Throughout the Caribbean and South America, it’s often prepared with rum, dried fruits, cinnamon, nutmeg, vanilla, spices, flour, sugar, butter, semi-sweet wine, and browning.
I attended the Culinary Institute of America and learned the art of cooking. Throughout my career, I’ve enjoyed baking this recipe year-round for friends and family, and they loved every crumb. So why not make it available year-round?
Our Mission
Our recipe is simple, the ingredients are authentic, the texture is decadent, and the flavor profile is “island country.” Our goal is to introduce Caleeboy’s Jamaican Rum Cake to every state in America, helping someone in every state feel special and loved. Can you help me?
