About The Chef
Like many Jamaican males, my first name is Carlton. My father nicknamed me Caleeboy, a name I loved because it made me feel special and loved.
I was born in Spanish Town, Jamaica, and later moved to the States. Thanks to my parents, my siblings and I never lost our love for the foods and flavors of the "Island in the Sun."
Black cake, or rum cake, was a favored seasonal dessert in our home, mostly served at Christmas or weddings. I always thought something so good should be enjoyed year-round, not just for special events.
Throughout the Caribbean and South America, it's often prepared with rum, dried fruits, cinnamon, nutmeg, vanilla, spices, flour, sugar, butter, semi-sweet wine, and browning.
I attended the Culinary Institute of America and learned the art of cooking. Throughout my career, I've enjoyed baking this recipe year-round for friends and family, and they loved every crumb. So why not make it available year-round?
